  • 1 medium red onion thinly sliced
  • 4 chicken thighs or breasts, or whole chicken skinless
  • 1 large potato peeled and quartered
  • 1 large carrot peeled and cut into strips
  • 1 large courgette sliced lenghtwise
  • 4 tbsp vegetable oil or olive oil
  • 1/2 tsp black pepper
  • 1 tsp turmeric
  • 1 pinch of salt
  • 3 tbsp parsley and coriander mix finely chopped
  • 1 cup water
  • 1 handfull of golden raisins


  • Spread the onion slices in the bottom of the tagine, then place on top of them the chicken thighs.
  • Arrange the vegetables on top, then drizzle the oil over them.
  • Mix the spices with parsley and coriander, and water in a small mixing bowl, then pour it all over the veggies and chicken. Put on the lid and let it cook over very low heat for 20 minutes.
  • Sprinkle the raisins on top, then put on the lid and cook them for another 25 to 35 minutes until the chicken is done.
  • Once the veggies and chicken are done, serve your tagine right away with some bread and enjoy!


If you love chicken skin, you can leave the skin-on chicken thighs, or whatever chicken pieces you are using. I personally don’t like chicken skin until it’s fried, so I like to remove it for this recipe.
