Ingredients
1 whole chicken (about 3-4 lbs), cut into piecesfrozen or fresh
3tbspvegetable oil
1/2preserved lemon
3garlic clovesthinly sliced
2tbspfresh parsleyfinely chopped
1tspturmeric powder
1/4tspblack pepper
Saltto taste
1/4 cupgreen olives
4cupswater
Instructions
In a traditional tagine or a heavy-bottomed pot, heat the vegetable oil over medium heat.
Add the chicken, garlic, and spices and saute them for 2 to 3 minutes until the chicken turns white.
Stir in the parsley, preserved lemon and water.
Put on the lid and cook for 20 minutes over low heat until the chicken is almost done.
Stir in the potatoes and cook for another 20 minute until the potatoes are almost done.
Stir in the olives and remove the lid. Let them cook for 5 to 10 minutes over low heat until the water reduces and you get a slightly thick sauce.
