Palestinian Maqluba Recipe

Ingredients

pounds
lamb stew meat, beef or chicken

turmeric

vegetable oil

large cauliflower head
split into small pieces
vegetable oil
for frying

long grain rice
Instructions
Stir the meat, spices, and tablespoons of oil in pressure cooker. Cover them with 12 cups of water.
Put on the lid and secure it. Cook it over low medium heat for 45 minutes to 1 hour until the meat is done.
In the meantime, heat 2 inches of oil in a large pan. Fry the caulflcauliflower pieces until golden brown.
Drain them and add them to the pot with the rice and 3 tablespoons of the oil where you fried the cauliflower. Stir them and put on the lid again.
Bring the pot to pressure, and cook over low heat for 15 to 18 minutes until the rice is done, and it absorbs all the water.
Release the pressure then serve it hot and enjoy!
Notes
Before you add the rice and cauliflower, taste the stew to check if the salt is good or not.
After you add the cauliflower and rice, make sure there is enough water that cover them. If it's not enough, add more water until they are covered.
