The Best Quick and Easy Pasta Recipe with Tomato Sauce
This simple pasta makes for a great dish to serve at any time of the day. I'm on a diet, so I like to serve it for lunch on my cheat days, but it also makes for the perfect weeknight dinner. It's an easy recipe, so I love preparing it during my busiest days as well and surprise there are a lot of them!

Ingredients
2cupsbow tie pasta
2 tbspvegetable oil
1/2red onionpeeled and finely chopped
2large tomatoespeeled, and finely chopped
1tbspfresh coriander, finely chopped
Saltto taste
Black pepperto taste
1/2tspturmeric powder
1cuppasta cooking water
2 tbsptomato paste
Red pepper flakesoptional
Instructions
Bring a salted pot of water to a boil, then cook in it the pasta for 8 to 10 minutes until it becomes dente.
Heat the oil in a large skillet over medium heat, then cook it in the onion for 2 minutes until it softens.
To prepare the tomato sauce, add to it the chopped tomato with coriander, turmeric, a pinch of salt and pepper, then cooko them over low heat for 8 to 10 minutes until tomato is cooked and the sauce thickens.
Once the pasta is done, drain it and place it aside.
Add 1 cup of hot starchy pasta water to the tomato sauce followed by the tomato paste, then stir until the paste dissolves.
Cook the sauce for few more minutes until it thickens, then add to it the pasta.
Stir the pasta until it's completely coated with the sauce, then keep cooking it for 2 to 3 minutes until it absorbs the sauce.
Garnish your pasta with some fresh basil then serv it hot and enjoy!
Notes
If you wish, you can feel free to add some cheese to this delicious pasta recipe. Personally, I don't like to add cheese to this recipe because it tastes amazing on its own.
If you don't have large tomatoes, you can substitute them with cherry tomatoes or grape tomatoes.If you love creamy pastas, you can also add about 1 to 2 tablespoons of heavy cream or cream cheese to make a creamy sauce. I use it often, but my favorite version is this simple sauce.If you love baked pasta, after you finish preparing this recipe, you just have to pour it into a greased baking dish, sprinkle some grated parmesan cheese or any other cheese of your choice on top, then broil it for 4 to 6 minutes until the cheese melts. It will make for one of the most simple and quickest weeknight meals.
