Ingredients
2 1/2poundschicken breastsdiced
2red onionsdiced
1/4cupparsleyfinely chopped
1/4cupcorianderfinely chipped
1/2tbspturmeric
1/8tspred pepper flakes
1tspblack pepper
saltto taste
3tbspvegetable oil
2bell peppersdiced
Instructions
Slice the chicken breasts into cubes and put them aside.
Mix the coriander with parsley, and spices in a large bowl. Mix in the diced onion and chicken until well combined.
Let them marinate for at least 4 hours and overnight for the best results.
Prepare the grill and grease the grates.
Stir the rest of the oil into the chicken mixture until combined.
Thread the chicken pieces with the bell pepper pieces onto skewers.
Grill the skewers until they're done, then serve them hot and enjoy.
Notes
For the best flavor, it's very important to let the chicken marinate for at least 4 hours. If you can allow it to marinate overnight, it will be best and will also make your job so much easier the next day when you wish to grill it.
It's very important not to add any oil to the marinade because it will coat the chicken pieces and block them from absorbing the flavors of the marinade. So make sure to add it right before grill the chicken only.
