Ingredients
2cupsdried split fava beans
5cupswater
1head of garlic
1tspsalt
Cuminto taste
Paprikato taste
Olive Oilto taste
Instructions
In a large pot or pressure cooker, combine the fava beans with water, salt, and garlic.
Put on the lid, and cook on high pressure for 20 to 25 minutes or bring to a boil or simmer for 45 minutes until the beans are cooked.
Once the bans are cooked, drain the head of garlic and remove it.
Use an immersion blender to blend the soup until smooth and creamy. If using a regular blender, allow the soup to cool slightly before blending in batches.
Pour the soup back into the pot and bring it to a boil. Cook it until it reaches the desired consiconsistency over medium heat.
Ladle the soup into serving bowls or plates. Drizzle over it olive oil, then top it with some cumin and paprika.
