Moroccan Bissara is a traditional and flavorful fava bean soup that has been a staple in Moroccan cuisine for generations.

Ingredients

  • 2 cups dried split fava beans
  • 5 cups water
  • 1 head of garlic
  • 1 tsp salt
  • Cumin to taste
  • Paprika to taste
  • Olive Oil to taste

Instructions

  • In a large pot or pressure cooker, combine the fava beans with water, salt, and garlic.
  • Put on the lid, and cook on high pressure for 20 to 25 minutes or bring to a boil or simmer for 45 minutes until the beans are cooked.
  • Once the bans are cooked, drain the head of garlic and remove it.
  • Use an immersion blender to blend the soup until smooth and creamy. If using a regular blender, allow the soup to cool slightly before blending in batches.
  • Pour the soup back into the pot and bring it to a boil. Cook it until it reaches the desired consiconsistency over medium heat.
  • Ladle the soup into serving bowls or plates. Drizzle over it olive oil, then top it with some cumin and paprika.
  • Serve it hot with some bread and enjoy!
