  • 2 egg yolks
  • 3/4 vegetable oil
  • salt to taste
  • black pepper to taste


  • Put the egg yolks in a medium bowl and beat them for 30 sec until they become smooth.
  • Add the oil in a steady stream while whisking or start by adding 1 tablespoon of oil at a time and whisk it until it's incorporated then add 2 tablespoons once it starts to thicken.
  • Continue to whisk the mayonnaise until it becomes light, thick and creamy.
  • Season it with some salt and pepper.
  • Serve it right away, add it to your salad or store it in the fridge until ready to use and enjoy!


  • Make sure that the flavor of the oil you are using is not strong. I like to use vegetable oil all the time because they are light, and won’t affect the taste. Canola oil and sunflower oil are great choices.
  • If you like olive oil, you can experiment with light olive oil. I tried it before, and I didn’t like it at all. It changed the taste of the mayo.
  • If you have someone who can help you while making the mayo, ask them to add the oil in a steady thin stream while you are whisking or beating with an immersion blender. Otherwise, you can simply add 1 to 2 tablespoons of oil at a time and mix until they are well incorporated.
  • For the best taste, season your mayo with table salt.
