Put the egg yolks in a medium bowl and beat them for 30 sec until they become smooth.
Add the oil in a steady stream while whisking or start by adding 1 tablespoon of oil at a time and whisk it until it's incorporated then add 2 tablespoons once it starts to thicken.
Continue to whisk the mayonnaise until it becomes light, thick and creamy.
Season it with some salt and pepper.
Serve it right away, add it to your salad or store it in the fridge until ready to use and enjoy!
Notes
Make sure that the flavor of the oil you are using is not strong. I like to use vegetable oil all the time because they are light, and won't affect the taste. Canola oil and sunflower oil are great choices.
If you like olive oil, you can experiment with light olive oil. I tried it before, and I didn't like it at all. It changed the taste of the mayo.
If you have someone who can help you while making the mayo, ask them to add the oil in a steady thin stream while you are whisking or beating with an immersion blender. Otherwise, you can simply add 1 to 2 tablespoons of oil at a time and mix until they are well incorporated.
For the best taste, season your mayo with table salt.
If you are planning to add this creamy mayo to a salad, do no not season it with salt because the Mayo is already salted.
