Ingredients
4chicken legsskinless
1yellow or red onionthinly sliced
1/8 teaspoonblack pepper
Pinch of salt
1cupwater
1/2cupgolden raisins
3 tablespoonsvegetable oil
1/2tablespoonturmeric
2tablespoonsfresh corianderfinely chopped
2tablespoonsparsleyfinely chopped
Instructions
Arrange half of the onion slices in the bottom of the tagine.
Add the chicken legs on top, followed by the remaining onion slices.
Mix the water, coriander, parsley, and spices in a small bowl or cup.
Pour the mixture over the onion and chicken legs, then drizzle the oil on top.
Put on the lid and cook the tagine for 20 over low heat.
Rinse the gold raisins and sprinkle them on top.
Continue to cook the tagine for 15 to 20 minutes until the chicken is done.
Serve it hot and enjoy!
Notes
You can use any piece of chicken for this recipe, I highly recommend using chicken legs or wings because they are more tender. Chicken breasts tend to be a bit dry.
If you want to use chicken breasts in this recipe, cut them into smaller pieces to prevent them from being dry.
If you don't have a tagine, you can use a dutch oven instead. It will not yield the taste results, but the stew will be just as delicious.
