Ingredients
1large potatopeeled and cut into fries
4eggs
vegetable oilas needed
saltto taste
black pepperto taste
Instructions
Heat 1 inch of oil in a deep skillet over high medium heat and season it with a pinch of salt.
Fry the potato slices until light golden brown.
In the meantime, whisk the eggs in a large bowl with a pinch salt and pepper.
Preheat the oven to 360 F.
Grease a pan or skillet with some of the frying oil. Layer in it the fries.
Pour the egg mixture all over it until all the potato pieces are coated.
Bake the tortilla for 8 to 10 minutes until eggs set.
Or, cook the tortilla covered over low heat for 5 to 7 minutes until the eggs set on both sides.
Run a rubber spatula on the edges of the Spanish tortilla to loosen the edges.
Transfer your tortilla to a large plate then serve it warm and enjoy.
