Traditional Moroccan Berber Chicken and Vegetables Tagine

Ingredients
1medium red onionthinly sliced
4chicken thighs or breasts, or whole chickenskinless
1large potatopeeled and quartered
1large carrotpeeled and cut into strips
1large courgettesliced lenghtwise
4tbspvegetable oil or olive oil
1/2 tspblack pepper
1tspturmeric
1pinch of salt
3tbspparsley and coriander mixfinely chopped
1cupwater
1handfull of golden raisins
Instructions
Spread the onion slices in the bottom of the tagine, then place on top of them the chicken thighs.
Arrange the vegetables on top, then drizzle the oil over them.
Mix the spices with parsley and coriander, and water in a small mixing bowl, then pour it all over the veggies and chicken. Put on the lid and let it cook over very low heat for 20 minutes.
Sprinkle the raisins on top, then put on the lid and cook them for another 25 to 35 minutes until the chicken is done.
Once the veggies and chicken are done, serve your tagine right away with some bread and enjoy!
Notes
If you love chicken skin, you can leave the skin-on chicken thighs, or whatever chicken pieces you are using. I personally don't like chicken skin until it's fried, so I like to remove it for this recipe.
