How to Defrost Frozen Bread Fast (5 Easy Ways)

5

Short answer: the fastest way to defrost frozen bread is to toast slices straight from the freezer, which takes a few minutes. For a single roll or one or two slices you need soft right now, wrap them in a damp paper towel and microwave for 30 to 45 seconds, then eat right away. A whole loaf thaws in about 3 hours on the counter, or you can warm it straight from frozen in a 350°F (175°C) oven. Flatbreads like msemen and baghrir go straight into a dry pan.

The one place not to thaw bread is the fridge. Here is every method, how long each takes, and which one suits which bread.

The counter times come from King Arthur Baking’s guide on how to defrost bread: about 30 minutes for slices, an hour for rolls and around three hours for a loaf.

1. Toast it straight from frozen (fastest for slices)

If your bread was sliced before freezing, you do not need to thaw it at all. Put the frozen slices straight into the toaster or toaster oven. They may need a slightly longer setting or a second round. Many toasters have a “frozen” button that adds a little extra time.

This is the main reason to slice a loaf before you freeze it. You can take out exactly what you need, one or two slices at a time.

2. Use the microwave (fastest for soft bread)

The microwave is quick, but it is also the easiest method to get wrong. Done badly, it turns bread chewy and then rock hard within minutes.

  1. Wrap one roll or one or two slices in a damp paper towel or a clean, damp kitchen towel.
  2. Microwave for 30 seconds. A roll may need up to 45.
  3. Check it. If the center is still icy, add 10 more seconds.
  4. Eat it right away.

The damp towel adds steam so the bread does not dry out. Do not microwave a whole loaf this way, because the outside overcooks long before the middle thaws.

3. Warm it in a dry skillet (best for flatbreads)

Flatbreads thaw so fast that you can treat them like fresh. Put the frozen bread in a dry pan over low to medium heat and warm it for a minute or two on each side, until soft in the middle and lightly crisp outside. This works for pita, tortillas, naan and most Moroccan breads.

4. Heat it in the oven (best for whole loaves)

The oven is the best way to make a frozen loaf taste freshly baked.

  1. Heat the oven to 350°F (175°C).
  2. Take the bread out of its plastic bag. For a soft loaf, wrap it loosely in foil. For a crusty loaf, you can leave it bare.
  3. Put it directly on the oven rack.
  4. Start checking after 15 minutes. A baguette or rolls may be ready by then, while a large loaf can take 30 minutes or more. Press the center or slide a thin knife in to check that it is no longer frozen.
  5. If you used foil, open it for the last few minutes to crisp the crust.

If you already thawed the bread on the counter, a few minutes in a 350°F oven brings back a crisp crust. Cover it loosely with foil if it starts to brown too much.

5. Let it thaw on the counter (best texture)

If you can plan ahead, the counter gives the best result. Leave the bread in its bag while it thaws, so the moisture that turned to ice soaks back into the bread instead of evaporating. Then crisp it in the oven if you like.

  • Slices: about 30 minutes
  • Rolls: about 1 hour
  • A whole loaf: about 3 hours, depending on its size and how warm your kitchen is

Take a loaf out of the freezer in the morning and it will be ready for lunch.

What about the air fryer?

An air fryer works well for rolls, bagels and thick slices. Use a moderate temperature and check after a few minutes, because the outside crisps very quickly. Weigh down light slices with a small rack so the fan does not blow them around. Our post on air fryer mistakes to avoid explains why.

Why you should never thaw bread in the fridge

It seems like the safe choice, but the fridge makes bread go stale faster. Staling is not just drying out. The starch in bread slowly recrystallizes, and that happens fastest at fridge temperatures. Wikipedia’s page on staling explains the science. Bread is better on the counter for a day or two, or in the freezer for longer.

Defrosting Moroccan breads

Moroccan breads freeze really well, and a few minutes of the right heat brings them back. The msemen, baghrir and krachel tips below come straight from our recipe posts.

Round Moroccan khobz bread

Khobz

Cut a round of khobz into wedges before freezing, so you can take out just what you need. Thaw the wedges on the counter, then warm them in the oven or a dry pan for a minute or two. Our guide to Moroccan breads suggests the same pan trick for leftovers.

Msemen

As the msemen recipe explains, it keeps in the freezer for up to a month. Put it straight from the freezer into a nonstick pan over low heat and flip it now and then until it is warm and crisp again. No thawing needed.

Folded Moroccan msemen flatbreads

Baghrir

Freeze baghrir with parchment paper between the pancakes so they do not stick together. They keep for up to 2 months. Reheat them gently in a pan or in the microwave.

Krachel

Krachel also keep for up to 2 months in the freezer. Let them thaw at room temperature, then warm them briefly in the oven or microwave until soft again.

Freeze it right so it thaws better

How you freeze bread makes a big difference to how it comes out.

  • Freeze it fresh. Bread freezes at the quality it has that day. Freeze it on the day you bake or buy it, not when it is already going stale.
  • Let it cool completely. Warm bread makes steam inside the bag, which turns to ice.
  • Slice it first. Then you can take out what you need.
  • Wrap it twice. Plastic wrap or a bag, then a freezer bag with the air pressed out. This stops freezer burn.
  • Label it. Bread keeps its best quality for up to about three months in the freezer.

FAQ

What is the fastest way to defrost bread?

Toast sliced bread straight from frozen. For a soft roll, wrap it in a damp paper towel and microwave for 30 to 45 seconds.

How long does frozen bread take to thaw at room temperature?

About 30 minutes for slices, 1 hour for rolls and around 3 hours for a whole loaf.

Can you put frozen bread straight in the oven?

Yes. Heat it at 350°F (175°C). Small breads may be ready in about 15 minutes, while a large loaf can take 30 minutes or more.

Should bread thaw in or out of the bag?

In the bag. The moisture soaks back into the bread instead of drying out. Crisp the crust in the oven afterward if you want.

Why did my bread go hard after microwaving?

Microwaved bread loses moisture fast and turns hard as it cools. Wrap it in a damp towel, heat it in short bursts and eat it right away.

Can I refreeze bread that has been thawed?

You can, but the texture gets drier each time. It is better to freeze bread in slices or portions so you only thaw what you need.
